A Columbus-based fast-casual chain known for Eastern Mediterranean fare intends to add a Butler County restaurant in 2027.
Brassica's eighth Ohio location is planned for the Village North development in West Chester Twp., situated north of Voice of America MetroPark, according to Journal-News.com. The brand began in Columbus in 2015 under brothers Kevin and Darren Malhame.
Communications Director Aminda Warburton said the menu draws on Lebanese food the founders ate growing up, with broader Eastern Mediterranean influences. Kevin Malhame has also credited a falafel sandwich eaten in Paris over 25 years ago as part of the concept's inspiration.
Plans call for daily operation from 11 a.m. to 10 p.m., with indoor and patio seating. Customers assemble their own salads and sandwiches from ingredients such as falafel, braised chicken and smoked beef brisket, plus vegetables, pickles and house sauces, Warburton said.
According to Warburton, popular items at existing locations include crispy falafel, seasoned fries with Special Sauce and Minty Pink Lemonade made with organic cane sugar, fresh lemon and beet juice. Pitas are baked throughout the day in a Woodstone oven, and the company works with artisan producers including Soom Foods for tahini.
Warburton said the menu extends beyond salads and sandwiches to fries, beer, wine, a frozen tequila-based Brassarita and tahini chocolate chip cookies. She described dining rooms with walnut wood details, marble tabletops and original artwork, plus a curated wine and beer selection. The Symmes Twp. location near Loveland was the first in the Cincinnati area.
